Crunchy, super tasty brussels sprouts
Ingredients
- Brussels sprouts
- Olive oil
- Nutritional yeast
- Salt + pepper

Why?
An great side dish or addition to a roast
How?
I've not added measures in the ingredients list, as this can come down to your personal preference.
- Clean the sprouts and ideally make a cross cut at the bottom of each one
- Add to a pot of boiling water and par boil until they are soft (about 15mins)
- Rinse the sprouts under cold water to stop the cooking process and leave to dry
- Pre heat oven to 185C / 375F
- Place sprouts in a bowl and cover with olive oil, yeast extract, salt and pepper and give a good mix
- Place sprouts on a baking tray then squash each sprout flat with the bottom of a glass or some flat object. This squeezes out the water and helps with the crunch
- Place in the oven and bake until crispy and golden
- Remove, serve with a little extra nutritional yeast / salt and pepper
- Eat well!
Additional options
- Feel free to add additional spices to the mix
- You can also cover with various plant based cheeses after baking
- Crushed nuts also go well
