One bowl vegan banana bread
Ingredients
- 4 ripe bananas
- 1/4 cup plant based milk (soy, almond or oat)
- 1/4 vegetable oil (soy bean or sunflower)
- 1 tbsp apple cider vinegar
- 2 tsp vanilla extract
- 3/4 cup dark brown sugar
- 2 cups plain flour
- 1 1/2 tsp baking soda (bicarbonate)
- 2 tsp ground cinnamon
- 1/2 tsp salt

Why?
Great with some ice cream or a cup of tea
How?
- Preheat oven to 180C (350F)
- Line 9x5 loaf tin with greaseproof paper
- Peel four bananas and mash with a fork in the bowl
- Add wet ingredients (1/4 cup plant based milk, 1/4 cup oil, tbsp apple cider vinegar, 2tsp vanilla extract)
- Add 3/4 cup dark brown sugar
- Use fork or wooden spoon to mash and combine until all big lumps gone
- Add 2 cups flour, 1 1/2 tsp baking soda, 2 tsp cinnamon and 1/2 tsp salt
- Fold in dry ingredients until all combined
- At this point you can also add a handful of optional choc chips or raisins or both if you like
- Transfer batter to loaf tin and place in oven
- Bake for 45 mins and check with knife (if knife clean when removed, take out of oven and let cool)
- If knife not clean, keep baking until done.
Additional options
To give a little extra, you can add
- Chocolate chips
- Crushed cadburys mini eggs
- Raisins or sultanas
- Top with drizzle of royal icing (icing sugar and a little water combined)
